I you are on a low carb diet, such as the South Beach diet, all your meals should include protein as well as vegetables. Baked egg with broccoli is a perfect low carb breakfast!
Ingredients:
- two eggs
- 1 tablespoon olive oil
- 1/2 onion
- a pinch of salt
- a pinch of cayenne pepper
- a pinch of black pepper
- a few leaves of parsley; chopped
- 1 or 2 broccoli florets
- 1 cup of water
Cooking instructions:
- Crack the eggs in a bowl. Add the salt, cayenne pepper, parsley and black pepper. Whisk the ingredients together.
- Heat the olive oil in a small frying pan on medium heat.
- Add the onion and garlic fry for a few minutes.
- Add the egg mixture and spread the mix
- Flip the egg over when the eggs are cooked to fry the other side.
- Add the broccoli in a small pan and add the water.
- Cover the pan and heat the broccoli on high heat.
- The broccoli is done steaming when all the water is absorbed. It takes about 6 to 9 minutes.
