Baked eggs with broccolli


I you are on a low carb diet, such as the South Beach diet, all your meals should include protein as well as vegetables. Baked egg with broccoli is a perfect low carb breakfast!



Ingredients:
  • two eggs
  • 1 tablespoon olive oil
  • 1/2 onion
  • a pinch of salt
  • a pinch of cayenne pepper
  • a pinch of black pepper
  • a few leaves of parsley; chopped 
  • 1 or 2 broccoli florets
  • 1 cup of water

Cooking instructions:
  1. Crack the eggs in a bowl. Add the salt, cayenne pepper, parsley and black pepper. Whisk the ingredients together.
  2. Heat the olive oil in a small frying pan on medium heat.
  3. Add the onion and garlic fry for a few minutes.
  4. Add the egg mixture and spread the mix
  5. Flip the egg over when the eggs are cooked to fry the other side.
  6. Add the broccoli in a small pan and add the water. 
  7. Cover the pan and heat the broccoli on high heat.
  8. The broccoli is done steaming when all the water is absorbed. It takes about 6 to 9 minutes.
