Ingredients:
- 2 cups of lentils; washed en soaked
- 1 large onion, finely chopped
- 5 cloves of garlic, finely chopped
- 1 teaspoon of finely chopped ginger
- 2 tomatoes, sliced in cubes
- 2 green chillies, sliced
- 8-10 curry leaves
- 2 tablespoons of olive oil
- Spices: a pinch of salt, a pinch of black pepper, 1 teaspoon of tumeric, 1/2 teaspoon of garam masala, 1/2 teaspoon of cumin powder
Cooking instructions:
- In the olive oil, fry the onion on medium heat in a (stainless steel) stock pot until golden brown.
- Stir in all the spices, the garlic and the ginger.
- Add dal, tomatoes, green chillies, curry leaves, and 6 cups of water.
- Boil on low heat until the dal is smooth and tender. This will take about 30 minutes.
- Transfer the dal from the stock pot into a blender and mix well to create a smooth curry.
- Put the mixture back in the stockpot and cook on low heat for about 5 minutes.
