Ingredients:
- Tofu
- 2 tablespoons of olive oil
- 2 tomatoes; chopped
- 1 large onion
- 2 cups of (frozen) spinach
- a pinch of salt
- 1/3 cup of grated Parmesan cheese
Cooking instructions:
- Heat the olive oil in a frying pan on medium heat
- Add the onion and fry until golden brown
- Add the tomatoes and spinach and fry for 5 minutes
- Crumble the tofu with your hands, and add the tofu
- Mix the ingredients well, and stir fry for 10-12 minutes
- Add the grated Parmesan and mix well
