Delicious low carb tofu breakfast


If you are on a low carb, high protein diet, you might get tired of eating eggs every morning. Try this perfect healthy low carb breakfast to kick start your day!

Ingredients:

  • Tofu
  • 2 tablespoons of olive oil
  • 2 tomatoes; chopped
  • 1 large onion
  • 2 cups of (frozen) spinach
  • a pinch of salt
  • 1/3 cup of grated Parmesan cheese
 

Cooking instructions:
  1. Heat the olive oil in a frying pan on medium heat
  2. Add the onion and fry until golden brown
  3. Add the tomatoes and spinach and fry for 5 minutes
  4. Crumble the tofu with your hands, and add the tofu
  5. Mix the ingredients well, and stir fry for 10-12 minutes
  6. Add the grated Parmesan and mix well
