Perfect lunch!
Ingredients
- Two eggs
- Two medium sized potatoes, boiled and sliced in cubes
- 1 tablespoon of olive oil
- 1 onion
- 1 tomato, sliced in cubes
- 1 teaspoon of dehydrated coriander or parsley
- a pinch of salt
- 1/2 teaspoon of turmeric
Cooking instructions:
- Crack the eggs in a bowl. Add the salt and whisk the ingredients together.
- Heat the olive oil in a frying pan on medium heat.
- Add the onion fry for a few minutes.
- Add the potatoes, tomato, turmeric and coriander. Stir fry for about 5 to 8 minutes.
- Pour over the eggs and let it cook for about 5 minutes. Start scrambling the eggs and mix well with the potato mixture.
