Scrambled eggs with potatoes




















Perfect lunch!

Ingredients

  • Two eggs
  • Two medium sized potatoes, boiled and sliced in cubes
  • 1 tablespoon of olive oil
  • 1 onion
  • 1 tomato, sliced in cubes
  • 1 teaspoon of dehydrated coriander or parsley
  • a pinch of salt
  • 1/2 teaspoon of turmeric

Cooking instructions:
  1. Crack the eggs in a bowl. Add the salt and whisk the ingredients together.
  2. Heat the olive oil in a frying pan on medium heat.
  3. Add the onion fry for a few minutes. 
  4. Add the potatoes, tomato, turmeric and coriander. Stir fry for about 5 to 8 minutes.
  5. Pour over the eggs and let it cook for about 5 minutes. Start scrambling the eggs and mix well with the potato mixture.
